How Do Grease Traps Work?
A grease trap is essentially a tank where wastewater from your restaurant collects as it is washed down your drain. Solid foods settle to the bottom while fats, oils, and grease (referred to as FOG in our industry) float to the top. In the middle sits the effluent wastewater, which can be safely pumped out of the tank and into the civic sewer system. Grease traps work exceptionally well in keeping FOG from clogging your pipes, but they need to be cleaned out periodically, and when problems arise, they’re not something you can afford to wait on.

I had an emergency after Washington Gas said that there was a gas leak from the meter from the regulator and they said that it needed to be replaced immediately. They were able to send someone over in a few hours and although the cost was on emergency rates, the pricing was still competitive among other companies and were very responsive.
